Main dish? Me? I don't cook! I bake. It was time to call in reinforcements.
My husband.
They sent me Challenge Butter and a selection of spices, all of which were to be used in the recipe.
So, I give to you...the results of my husband's challenge.
Chipotle Herb Crusted Sea Bass
1 bunch green onions2 T. ground chipotle, or to taste
1/4 tsp fennel seed
1/2 tsp beau monde
1/2 tsp smoked paprika
1/4 cup freshly grated parmesan
1/4 cup softened Challenge butter
Juice of one lime
1 clove garlic
1/2 cup Japanese bread crumbs
4 (6oz) sea bass fillets
Add all ingredients to blender or food processor except for fish and bread crumbs. Puree until smooth.
Sprinkle a bit of salt onto fish fillets.
Spread herb paste all over fish; coat liberally.
Cover herb paste with Japanese bread crumbs.
Heat up non-stick frying pan over medium heat.
Add 2 T. vegetable oil and 1 T. Challenge butter
Add fish fillets. Fry fish 3 minutes on each side, depending on thickness.
Serve it up and enjoy!

Challenge Butter is 100% natural, by the way. No artificial anything and it doesn't come from cows treated with rbST either! It's pure sweet cream butter and it is gooooood.

Challenge Dairy is currently running an amazing sweepstakes! Be sure to enter for a chance to win a 7-day/6-night trip for 4 people to the Mountain Sky Guest Ranch in Montana’s Paradise Valley, just North of Yellowstone National Park.

Thank you to Challenge Dairy for providing the ingredients for the recipe. No other compensation was received. This post is based on my own personal opinions and experiences.

Sounds delicious!!! BRAVO to your hubby!
sounds yum and easy..but you lost me at beau monde. thanks for the tip on excluding the fillets from the ingredients to blend. it definitely would yield a result different from your own, which looks fantastic.
Yum! We would make a good team. I love the cook and am terrible at baking. I don't like to measure.
Looks tasty! Try "buttering up" the judges!
