They Challenged Me to Cook. How Dare They?

Challenge Dairy challenged me to come up with a recipe using Challenge Butter. I said yes and then straight up panicked, because they told me I was assigned to the main dish category.

Main dish? Me? I don't cook! I bake. It was time to call in reinforcements.

My husband.

They sent me Challenge Butter and a selection of spices, all of which were to be used in the recipe.

So, I give to you...the results of my husband's challenge.


Chipotle Herb Crusted Sea Bass

1 bunch green onions
2 T. ground chipotle, or to taste
1/4 tsp fennel seed
1/2 tsp beau monde
1/2 tsp smoked paprika
1/4 cup freshly grated parmesan
1/4 cup softened Challenge butter
Juice of one lime
1 clove garlic
1/2 cup Japanese bread crumbs
4 (6oz) sea bass fillets

Add all ingredients to blender or food processor except for fish and bread crumbs. Puree until smooth.

Sprinkle a bit of salt onto fish fillets.

Spread herb paste all over fish; coat liberally.

Cover herb paste with Japanese bread crumbs.

Heat up non-stick frying pan over medium heat.

Add 2 T. vegetable oil and 1 T. Challenge butter

Add fish fillets. Fry fish 3 minutes on each side, depending on thickness.

Serve it up and enjoy!
