Savory White Beans and Spinach Skillet Dinner with Swanson Flavor Boost

I have very fond memories of childhood meals, but there’s no mistaking the fact that my mom’s cooking was bland, bland, bland. (She knows it.) I still use her recipes, but I’ve definitely learned how to add more zing to them.

So I love the concept of Swanson Flavor Boost concentrated broth, because it adds a savory boost of flavor to anything! (With no MSG!)

There are four varieties: Beef, Vegetable, Chicken and Seafood, and each one contains four pouches of 100% natural broth inside. I was browsing through the Swanson Flavor Boost recipes and saw a super tasty skillet dinner idea. So I grabbed a packet of Vegetable broth and got busy!

Savory White Beans & Spinach Skillet Meal

Ingredients

1 tablespoon olive oil
1 medium onion, minced (about 1 cup)
1/4 teaspoon crushed red pepper
1 packet Swanson® Flavor Boost™ Concentrated Vegetable Broth
1 package (about 6 ounces) fresh baby spinach (about 8 cups)
1 can (about 15 ounces) white kidney beans (cannellini), rinsed and drained
1/4 cup grated Parmesan cheese
1 cup ditalini pasta, cooked and drained (about 2 cups)
Directions

1. Heat the oil in a 12-inch skillet over medium heat. Add the onion and cook until tender, stirring occasionally. Stir in the red pepper, concentrated broth and spinach. Cover and cook until the spinach is wilted. Add the beans, cheese and pasta.

Toss all ingredients together to coat, then serve.

This was really surprising to me, because I didn’t expect it to taste nearly as flavorful as it did. The Swanson Flavor Boost packet greatly enhanced the ingredients, and I can’t wait to make it again. In fact, I’m going to make this for my daughter when she visits next month.
