Sloppy Enchilada-Style Burritos with Red Gold Tomatoes

Tomatoes, tomatoes, tomatoes…I have lots and lots of Red Gold premium tomatoes. What better to do with them than start cooking?!

Sloppy Enchilada-Style Burritos

Ingredients

1 small onion, diced
1 clove garlic
1 T olive oil
1 can black beans, rinsed and drained
1 can pinto beans, rinsed and drained
1 can red enchilada sauce
1 can Red Gold diced tomatoes with basil, garlic and oregano
1 can Red Gold petite diced tomatoes with green chilies
1 can Red Gold tomato puree
2 T dried cilantro
1 T chili powder
Pinch of salt and pepper
1 1/2 cups grated Cheddar cheese
8 flour tortillas

Optional: 1 cup cooked chicken or meat of your choosing

 

Directions

1. Heat oven to 400 degrees. Grease a 13″ x 9″ x 2″ baking dish with cooking spray. Heat 1 tablespoon olive oil in saucepan. Cook onion and garlic on medium heat until softened, about 5 minutes.

2. Add beans to the saucepan; stir and cook for a minute. Stir in tomatoes, tomato puree, cilantro and chili powder. Add a pinch of salt and pepper. Increase heat and bring to a boil. Once boiling, reduce to a bubbling simmer. Let cook for 20 minutes, stirring occasionally. The sauce will gradually thicken.

3. Lay open the tortillas and divide the cooked sauce between them, spreading almost to edges. (If adding meat, divide between tortillas, then sprinkle half of the cheese on top and roll up. Place seam-side down in the baking dish.

4. Pour enchilada sauce over the the tortillas, and then sprinkle with remaining cheese. Bake for 15 minutes. Serve with sour cream or plain yogurt, if desired.

The enchilada sauce will still be quite soupy after baking, so don’t worry. Spoon it over the tortillas as you serve them…the sloppier the better!
